Seattle's Tutta Bella Drastically Reduces Waste

Tutta Bella Neapolitan Pizzeria has been committed to waste reduction and energy saving practices since their inception. These efforts have not gone unrecognized. As a tribute to Tutta Bella's efforts, Mayor Nickels himself kicked off the City of Seattle's restaurant food composting program from the Columbia City Tutta Bella location in 2006. Since then, Tutta Bella's recycling, composting and energy saving efforts have steadily increased resulting in a number of remarkable achievements.

Tutta Bella restaurants collectively serve nearly 1000 customers a day at their Seattle locations in the Columbia City, Stone Way and Westlake neighborhoods. At the end of a day, each location disposes of no more than a 12-gallon garbage bag. Everything else is either composted or recycled.

For their takeout containers, Tutta Bella utilizes Bio-Plus Earth, made by Fold-Pak. This packaging is made of 100% recycled paper and is 100% compostable (endorsed by the Green Restaurant Association and approved for the Cedar Grove composting facility). While their to-go cups, lids, and straws may look like plastic, they're not. Made by Eco-Products, a carbon neutral company, these items are corn based and fully compostable (approved, or in the approval process, for the Cedar Grove composting facility). Just about everything is recycled or composted including paper, plastics, metal, glass, vegetables, expired pizza dough, coffee, coffee cups and filters, cardboard, floral scraps, and napkins and paper towels.

Tutta Bella is also committed to energy and water conservation tactics and subscribes to the City of Seattle's Neighborhood Smart Business Program managed by Seattle City Light. All Tutta Bella restaurants use energy saving light bulbs, flow restrictors, energy efficient appliances, and green cleaning solvents. Additional water conservation efforts include sweeping outdoor sidewalks, instead of using a hose, and watering all plants with a watering can.
