A staple in Southern cooking and a long time American comfort food, this cornbread baking mix provides a gluten-free alternative to this traditional food. The Cornbread Mix can be morphed into both savory and sweet recipes for breakfast, lunch and dinner. All of Pamela's Products baking mixes may be used in place of wheat-based mixes in a family's recipe roster. The mixes were developed, by company founder Pamela Giusto-Sorrells, to be quick, easy and delicious, with minimal effort.

"It's important for me to produce delicious gluten-free alternatives for people who have to, or choose to, follow a gluten-free diet. Food is something that everyone should be able to enjoy, for every occasion. I created Pamela's Cornbread because cornbread is one of those foods that holds fond memories of my childhood. It reminds me of my family gathered around the table, quickly spreading our warm pieces with butter and honey before they cooled off! As we ate, melted butter and honey would drip from our fingers. Simple, warm and delicious!" states Pamela Giusto-Sorrells.

Pamela's Products are a tried-and-true staple for those on a gluten-free diet including Celiacs. Celiac Disease is the world's most common autoimmune disease, with the only treatment today being a strict adherence to a diet devoid of gluten. Gluten is most commonly contained in wheat (durum, semolina, kamut, spelt), rye, barley and triticale. (For more complete information, please visit, "About".) People with autism spectrum disorders, cancer, wheat allergies, alternative diets, and even those adhering to a Kosher or 'natural' diet, also frequently turn to Pamela's Products for satisfying that sweet tooth or simply for making bread or pancakes.

Pastry Chicago's 4th Annual Student Cake Decorating Competition A Success

Pastry Chicago, an organization which brings culinary schools, community organizations, and members of the Chicago community together saw a successful event in its 4th Annual Student Cake Decorating Competition held at Esperanza Community Services on Saturday, April 18, 2009. Students from culinary and high schools competed for prizes and recognition, and to raise funds for Esperanza.

More than one hundred competitors and spectators gathered on Saturday at Esperanza Community Services, an organization which offers services and therapeutic education to children and adults with disabilities. Esperanza celebrated its 40th anniversary this year, and the theme of the cake decorating competition reflected the celebration of 40 years of the organization's service. Each attendee to Saturday's event contributed a donation to Esperanza.

Nearly 40 competitors at both the high school and culinary school levels participated to win this year's titles and prizes which were donated by Villeroy & Boch, the sponsor to the event. Judges who volunteered their time included internationally-renowned Master Cake Artist Nicholas Lodge; Chef Keli Fayard of Vanille Pâtisserie; Chef Peter Rios of Alliance Bakery; Chef Sandy Folsom of Wilton Enterprises; Chef Barbara Evans of Wedding Cake Connection; Sally Scheib of Esperanza Community Services; and Nelly Carreño of Telemundo.

While the judges examined each contestant's cake creation which consisted of three-tiered dummy cakes decorated by rolled fondant and gumpaste decorations, all of the guests observed Chef Laura Ragano of The French Pastry School demonstrate floral gumpaste decorations. Chef Laura was assisted by Wayne Johnson, host of "Wayne's Weekend" on NBC Chicago News Today. Chef Laura has been featured twice as a guest on Wayne's weekly segment.

The judges awarded three winners in both the culinary school and high school divisions. The culinary winners included Evangelina Bertand (1st Place), Leila Manoochehri (2nd Place), and Sarah Dunworth (3rd Place). The winners of the high school division were Semaj Thomas (1st Place), Nina Salem (2nd Place), and Graciela Martinez (3rd Place).

"This competition was a successful event on many levels: It provided a challenge and creative outlet for students in both the culinary and high school levels, while benefiting the members of Esperanza," said Franco Pacini, Director of Pastry Chicago and Board Member of Esperanza Community Services. "It's a wonderful thing to bring several sectors of the educational community together and to contribute to a worthy cause."

New Wine Product Launch

Exica, Inc., the pioneer of modern wine aeration responsible for the widely-heralded Vinturi Red Wine Aerator, today launched Vinturi White Wine Aerator, the first-ever aeration tool that is exclusively designed for use with white wine.

Following the success and numerous accolades achieved by its red wine counterpart, the Vinturi White Wine Aerator proves what was once dismissed – the need to aerate white wines – and confirms that proper aeration will similarly enhance the white wine experience. Vinturi White Wine Aerator uniquely accelerates the white wine breathing process, enabling wine drinkers to fully enjoy their wine from the very first sip. Instantly Vinturi White Wine Aerator will deliver a better bouquet, enhanced flavors, and smoother finish.

“Most people understand the advantages of aerating red wines, yet don’t realize that white wines also benefit,” says Tasting Room Manager at PlumpJack Winery and CADE Winery, Joshua E. Zanow. “With the Vinturi White Wine Aerator, the tropical fruits of PlumpJack’s Reserve Chardonnay jump from the glass and the more subtle mineral notes of CADE’s Sauvignon Blanc immediately become apparent.”

Since its launch in 2007, Vinturi Red Wine Aerator has reinvented the standards for aeration, quickly becoming the best selling wine accessory in both retail stores and online, being used by notable restaurants nationwide, and becoming the chosen aeration tool of over 100 Napa Valley and Sonoma wineries. While Vinturi White Wine Aerator is built upon the same successful design principles that have made the Vinturi Red Wine Aerator the industry standard for aeration, it employs a different aeration engine that is designed specifically for white wines.

"With Vinturi White Wine Aerator, we have perfected the breathing process for white wine. The improvements that white wine demonstrates using this aerator are as noticeable as for red wine,” says Rio Sabadicci, inventor of Vinturi and CEO of Exica, Inc. “Feedback has been extremely positive and we are proud to be the leaders to enhance the wine experience, now for both red and white wine."

To use, simply hold Vinturi White Wine Aerator over a glass and pour wine through. Carefully designed to blend beautiful form with function, Vinturi White Wine Aerator draws in and mixes the proper amount of air for the right amount of time, allowing wine to breathe in the time it takes to pour a glass.

Early feedback from industry experts has been incredibly positive. Says Danielle Salone, Merchandise Manager of Jacuzzi Family Vineyards and Cline Cellars in Sonoma, “At our winery we tout the benefits of the Vinturi, pouring only reds through it, but when we tried the Vinturi White Wine Aerator, we were amazed at how positively it affected the taste of the whites. We are excited to offer our customers the same benefits to our fine white wines as our reds.”

How Does the Vinturi Work?
Vinturi applies Bernoulli's principle, which states that as the speed of a moving fluid increases, the pressure within the fluid decreases. When wine is poured in the Vinturi, its design creates an increase in the wine’s velocity and a decrease in its pressure. This pressure difference draws in air, which is mixed with wine for perfect aeration.

What are the benefits of using a Vinturi?
A Vinturi delivers a better bouquet, enhances flavors and offers a smoother finish. Any wine that benefits from aeration will be improved by use of the appropriately designated Vinturi.

• A better bouquet: Sample the nose of the wine. You'll appreciate the subtle aeromatic differences and the full aroma of the wine. Vinturi allows wine to display its intended aromas.

• Enhanced flavors: Take a sip. Vinturi aerated wine tastes better, richer and more expensive; more flavorful with better mouthfeel.

• A smoother finish: Vinturi aeration results in a much more pleasant and extended finish. Any bitterness or bad aftertaste is reduced or eliminated.

The suggested retail price is $39.95 and is available at

'MEAT: A Love Story' by Susan Bourette

In this enlightened era of “green” living and deliberately healthier eating, the question still remains: How does a conscientious meat-loving American get to have her meat and eat it, too—free of guilt?

This May, that great modern gustatory dilemma is answered with the paperback edition of the acclaimed MEAT: A Love Story by Susan Bourette (Berkley Trade Paperbacks; May 5 2009; $15.00; 978-0-425-22756-5). After spending a week working undercover at a slaughterhouse, tormented by the inhumane conditions, Susan Bourette decided to go vegetarian…but she lasted a whole five weeks and thirty-seven hours.

MEAT follows Susan Bourette’s real-life quest for superior meat, a search for ways to satisfy her taste for her favorite food group without supporting the horrific conditions in which most meat-producing animals are raised. Humorous yet authoritative, MEAT celebrates the deliciousness of being a carnivore and the lives of the passionate professionals who hunt, raise and cook meat—humanely.

As honest as it is entertaining, as wittily written as it is insightful, and essential as an antidote
to all the misinformation about the raising, cooking, and eating of meat,
Meat: A Love Story is not a polemic but a well-reasoned,
well-researched addition to the literature of food culture."

Tully Julep

As anticipation mounts for the 2009 Kentucky Derby, horseracing fans around the world convene for southern food, lively conversation, and, of course, whiskey and cocktails shared amongst friends.

According to the Derby Museum, the Mint Julep first became Churchill Down's signature drink in 1938 when they began serving the drink in souvenir glasses for 75 cents. Its history, however, dates back to 1803 when the print of the cocktail first appeared. Today, Kentucky Derby serves more than 80,000 Juleps throughout the two-day event. According to one local paper, the Louisville farmer who has grown mint for Churchill Downs since 1975, delivers more than 6,000 dozen bunches of the fresh mint to the track and area groceries during Derby week. A Derby party anywhere is not really a Derby party without mint juleps, but perhaps it’s time for a new twist on the traditional cocktail.

This year, Tullamore Dew, the last of the top 3 global Irish whiskeys still owned and managed by an Irish company, invites Derby fans everywhere to drink Irish for this year’s Derby with the creation of a brand new cocktail, the Tully Julep. Created in honor of this year’s 135th annual Kentucky Derby, the Tully Julep adds the smoothness of Irish to the fresh mint and simple syrup for an easy way to honor the winner of America’s most revered horse race.

Ireland has a rich history of horse racing. Point to pointing and jump racing (National Hunt Racing) both have Irish origins and even today, jump racing is marginally more popular than racing on the flat. The world's largest thoroughbred stud, Coolmore Stud, resides in Ireland and notable Irish trainers include Dermot Weld, John Oxx and Aidan O'Brien. So it's appropriate for the Irish to put a modern twist on the classic racing cocktail and the Tully Julep is certain to stimulate taste-buds and conversation throughout this year’s event.

2 oz Tullamore Dew
1oz Simple Syrup
Mint leaves

Muddle mint with simple syrup and Tullamore Dew. Add crushed ice. Mix with a bar spoon until glass is frosted. Add more crushed ice. Garnish with several mint sprigs. Add straw.

This class is best suited for families with children ages 8 and up and for adults.

“The Art of Chocolate” class answers questions like “What makes dark chocolate dark and white chocolate white?” This class gives participants a rare look at a real cocoa pod, beans and nibs, and other ingredients of chocolate. After getting the inside scoop on what makes chocolate so tasty, visitors create their own "abstract art" by using three types of chocolates to form a design. This class is suitable for families with children ages 4 and up.

New Organic Green Stevia

Stevia is poised to be a major low-calorie sweetener breakthrough, and Navitas Naturals is leading the way by bringing a healthy new traditional version of Organic Green Stevia to the marketplace. Although stevia is new to North America, it has been enjoyed for centuries by indigenous people in South America as a natural sweetener for their herbal medicines and teas. Navitas Naturals offers premium raw stevia in the traditional pure form celebrated by the Guarani and Mato Grosso Indians, whom crush the herb’s whole leaves to create a potent green powder.

Navitas Naturals Organic Green Stevia is a healthy alternative to refined sugar and synthetic sweeteners that is 100% organic, vegan, and kosher. After the stevia leaves used in this new product are collected, they are dried and milled into a fine powder at low temperatures to protect the nutrients of the plant. Organic Green Stevia is offered in an 8-ounce resealable pouch for $11.99. It is the first product to be launched under Navitas Naturals’ new natural alternative sweetener brand called Sweet Tooth. Navitas Naturals products are widely available at hundreds of stores throughout the U.S. and Canada including Whole Foods Markets, and on many popular websites including Navitas Naturals also supplies their superfoods and alternative sweeteners in bulk quantities to other food and beverage companies.

Called the “Honey Leaf” by native people, stevia is a white flowered herb indigenous to Paraguay. A little bit of Organic Green Stevia powder goes a long way. Stevia leaves are incredibly sweet, tasting as much as 30 times sweeter than sugar, yet they contain no sucrose. Stevia leaves contain glycosides, which taste very sweet to the tongue, but contain no sugar, no calories, and no carbohydrates. Therefore, despite its sweetness, stevia does not have a GI (Glycemic Index) nor does it affect the body’s insulin levels. Stevia has also been shown to aid the pancreas and improve digestion and it is ideal for people with diabetes and those that are intolerant to sugar, seeking weight control, or trying to avoid tooth decay.

Since 2003, Navitas Naturals’ mission has been to provide premium organic power foods that increase energy and enhance health. Through direct purchasing agreements, Navitas Naturals provides and expands fair trade economic opportunities in developing regions around the world. “Our products come from the wisdom of ancient cultures and their traditional use of plants for both culinary and medicinal purposes,” says Zach Adelman, President of Navitas Naturals. In addition to the new Organic Green Stevia, Navitas Naturals offers a wide variety of organic superfoods and sweeteners, including raw cacao, mesquite, lucuma, acai, yacon, mulberries, maca, camu camu, palm sugar, goldenberries, pomegranate, chia, flax, goji berries, hemp, raw cashews, Trail Power snack mix blends and Twister Power superfoods blends. Dark Beers: Not Just for the Dark Day

The days are getting longer and cold days are becoming fewer and farther between. Does that mean it’s time to toss any dark beers you might still have in your refrigerator? Definitely not, say Anheuser-Busch brewmasters. Dark beers like Beck’s Dark and Michelob Dunkel Weisse can be surprisingly refreshing in the warm months of summer.

Beck’s Dark: A rich and smooth beer, Beck’s Dark features a lingering, slightly sweet aftertaste. The deep copper color is the result of specially roasting the barley malt. Unlike dark ales, Beck’s Dark is a bottom fermented lager which creates a robust flavor and full body while retaining the refreshing properties of a lager beer.

Michelob Dunkel Weisse: This unfiltered dark wheat ale pours a deep bronze color and has a surprisingly bright and refreshing finish. The unmistakable clove and banana aromas result from the unique Bavarian yeast strain used.
Both beers would make a great edition to any spring or summer party or get-together. Explore how Michelob Dunkel Weisse’s toasted caramel malt complements smoked Gouda or contrasts the salty and milky flavors of feta. Save Beck’s Dark for dessert – on its own or as part of a vanilla ice cream float.

Brewers Association Releases Top 50 Breweries List

Brewers Association, which represents the majority of brewing companies in the U.S., announced the annual list of top 50 brewing companies. Released are lists for both Top 50 Craft Brewing Companies¹ of small and independent craft brewers (see Craft Brewing Statistics) plus a Top 50 Overall Brewing Companies list. Rankings are based on sales volume in 2008.

"In 2007, 35 of the top 50 brewing companies were small and independent craft brewers. In 2008 there were 37," states Paul Gatza, Director of the Brewers Association. "Craft brewers continue to have success and generate excitement behind the flavorful beer movement, but not without recent challenges including price increases for raw materials and supplies, as well as access to market issues."

Changes from last year's list include breweries moving up or down in the rankings based on volume sales. There was one new entrant into the Top 50 Craft list, The Saint Louis Brewery, and two craft brewers have claimed spots in the Top 50 Overall list—Big Sky Brewing Co. and Mac & Jack's Brewery. Consolidation of MillerCoors, last year's number 2 and 3 brewers, opened up a slot, and the merger of Widmer Brothers and Redhook into the company now named Craft Brewers Alliance, Inc. opened up another slot filled by emerging small and independent craft brewers.

A more extensive analysis of statistics on the craft beer segment in 2008 will be released April 22 during the Craft Brewers Conference in Boston, Massachusetts. The Association's full 2008 industry analysis, which shows regional trends and sales by individual breweries, will publish in the May/June issue of The New Brewer on May 19.

Avocado Vichyssoise

Avocados are actually a semitropical fruit native to Mexico and Central America. Now grown in California for export, the Hass variety accounts for up to 85% of the more than 80 varieties known. Rich in dietary fiber, vitamins K, A, B6, C and folate, avocados also provide unsaturated fats containing oleic acid. It is the fats in avocados that lend their creamy texture to this soup and to other dishes such as
sauces and dips.

Serves 4

2 large ripe avocados
Juice of 1 lemon
4 cups (1 L) Mushroom Broth (see below)
Vegetable stock or water
1 potato, peeled and cut into 1⁄2-inch (1 cm) cubes
Sea salt and freshly ground pepper
1⁄4 teaspoon (1 mL) hot pepper flakes
1⁄2 cup (125 mL) rice milk or soy milk
4 tablespoons (60 mL) chopped fresh chives or Basil Pesto, optional

Peel, pit and slice avocados in half and place in a bowl with lemon juice.

In a saucepan, bring broth to a gentle boil over high heat. Add avocados with lemon juice and potato. Season to taste with salt, pepper and hot pepper flakes. Cover, reduce heat and simmer for 15 minutes or until potato is soft. Let cool.

In a blender, combine rice milk and avocado mixture and blend until smooth. Transfer to a bowl, cover and refrigerate for 1 hour or until well chilled. Ladle into soup bowls and garnish with chopped chives, if using.

Avocado Vichyssoise may be made up to 2 days in advance and stored tightly covered in the refrigerator.

Mushroom Broth

This broth is brown and rich, full of earthy mushroom essence.

Serves 4

8 ounces (250 g) shiitake mushrooms
1 leek, white and light green parts, sliced
1 cup (250 mL) chopped onion
1 clove garlic, finely chopped
2 tablespoons (25 mL) olive oil
3 cups (750 mL) vegetable stock or water, divided
1 teaspoon (15 mL) pure maple syrup
1 teaspoon (5 mL) salt

Trim and discard mushroom stems. Slice caps and set aside.

In a large saucepan over medium heat, combine leek, onion, garlic and oil. Cook, stirring frequently, for about 10 minutes or until very soft. Add mushrooms and 1⁄2 cup (125 mL) of the stock. Bring to a gentle boil. Cover, reduce heat and simmer for 15 minutes.

Add remaining 21⁄2 cups (625 mL) of the stock, maple syrup and salt. Bring to a boil. Cover, reduce heat and simmer for 45 minutes.

For a clear broth, strain through a sieve and discard vegetables. For a thicker soup, using a slotted spoon, lift out half the vegetables and transfer to a food processor or blender. Process for 30 seconds or until smooth. Pour into a bowl. Repeat with remaining vegetables. Keep remaining broth liquids hot in the saucepan over low heat. Return purée to the saucepan and stir into the liquids.

Store stock in clean jars with lids in the refrigerator for up to 2 days or freeze in 2- or 4-cup (500 mL or 1 L) portions in freezer containers for up to 2 months.

Roasted Vegetable Salad

In summer the grill is easy and fast for grilling vegetables. Use an oiled basket or skewer the veggies whole to grill, then cut into serving-size bites. When combined with balsamic vinegar, the plums morph into a tart-sweet self-basting dressing.

Serves 4

• Preheat oven to 375°F (190°C)
• Rimmed baking sheet, lightly oiled

2 black plums, cut into eighths
1 red bell pepper, cut into eighths
1 carrot, cut in half lengthwise and then crosswise into eighths
1 onion, cut into eighths
2 cauliflower florets, thinly sliced
Sea salt and freshly ground pepper
4 tablespoons (60 mL) olive oil, divided
2 cups (500 mL) packed seasonal greens
2 tablespoons (25 mL) balsamic vinegar
1 can (14 to 19 oz/398 to 540 mL) chickpeas, drained and rinsed

On prepared baking sheet, combine plums, red pepper, carrot, onion and cauliflower. Season to taste with salt and pepper. Toss with 2 tablespoons (25 mL) of the oil and arrange in a single layer. Bake in preheated oven for 30 to 40 minutes or until tender when pierced with the tip of a knife.

In a salad bowl, toss greens with roasted vegetables and pan juices. Add remaining oil, vinegar and chickpeas. Taste and add more salt and pepper, if required.

You can use 2 cups (500 mL) cooked chickpeas, drained and rinsed, instead of canned.

Poached Peaches with Lavender Custard

People will wonder what the “spice is here as long as you don’t use too much lavender. The fragrant flowery taste complements the bland flavor of the custard.

Serves 4

4 peaches, halved
3⁄4 cup (175 mL) apple juice
1⁄2 cup (125 mL) white wine

Lavender Custard
12 cup (125 mL) soy milk or rice milk
1 piece (3 inches/7.5 cm) vanilla bean
1 piece (2 inches/5 cm) licorice root, optional
1 tablespoon (15 mL) dried lavender buds
12 ounces (375 g) silken tofu

In a saucepan, combine peach halves, apple juice and wine. Bring to a boil over medium heat. Reduce heat and simmer for 10 minutes or until the tip of a knife meets with some resistance when inserted. Remove from heat and let peaches stand in the poaching liquid until ready to serve or overnight.

Lavender Custard:
In a saucepan over medium-low heat, combine soy milk, vanilla bean, licorice, if using, and lavender. Cover, reduce heat and simmer until bubbles form around outside edge of pan. Let cool with cover on. Strain and discard vanilla, licorice and lavender. In a blender or food processor, process tofu until smooth. With the motor running, add cooled soy milk through opening in lid. Blend until smooth.

Using a slotted spoon, lift peaches into bowls and top with custard. Custard will keep tightly covered in the refrigerator for up to 2 days.

Use only organic lavender, which has not been chemically treated.

"Secret" Recipes for moms everywhere!

Just in time for Mother’s Day comes a collection of “recipes” for People-Pleasing Tossed Salad; Mother-in-Law Fruitcake; Soufflé of Fallen Expectations; and A Fairly Satisfactory Family Stew—

Flavored with frustration, simmering with rage, and iced with affection, SECRET RECIPES FOR THE MODERN WIFE: All the Dishes You’ll Need to Make from the Day You Say “I Do” Until Death (or Divorce) Do You Part (Fireside/Simon & Schuster; April 7, 2009; $12.00/Paperback; 1-4165-8084-0), by Nava Atlas, is the perfect companion for today’s busy, overextended, and occasionally conflicted wife. Enveloped in this funny faux 1950’s cookbook are the secrets—delicious, distressing, and everything in between—to help women through all the challenges of modern matrimony.

Whether a new bride or an old hand at wedded less-than-bliss, every wife (or ex-wife) will savor this scrumptiously sarcastic portrait of contemporary marriage. Hilarious, thought-provoking, and cleverly designed, SECRET RECIPES FOR THE MODERN WIFE skewers today’s cultural norms with a collection of “recipes” that illustrate the subtle madness of matrimony.

Filled with retro art that hearkens back to a bygone, blander age, SECRET RECIPES FOR THE MODERN WIFE grills societal norms with gleeful relish, but never loses sight of marriage’s simple, loving message. The result is a unique blend of art, wisdom, and commentary that no woman will read without immediately thinking of five friends who must have it.
