Pastry Chicago's 4th Annual Student Cake Decorating Competition A Success

Pastry Chicago, an organization which brings culinary schools, community organizations, and members of the Chicago community together saw a successful event in its 4th Annual Student Cake Decorating Competition held at Esperanza Community Services on Saturday, April 18, 2009. Students from culinary and high schools competed for prizes and recognition, and to raise funds for Esperanza.

More than one hundred competitors and spectators gathered on Saturday at Esperanza Community Services, an organization which offers services and therapeutic education to children and adults with disabilities. Esperanza celebrated its 40th anniversary this year, and the theme of the cake decorating competition reflected the celebration of 40 years of the organization's service. Each attendee to Saturday's event contributed a donation to Esperanza.

Nearly 40 competitors at both the high school and culinary school levels participated to win this year's titles and prizes which were donated by Villeroy & Boch, the sponsor to the event. Judges who volunteered their time included internationally-renowned Master Cake Artist Nicholas Lodge; Chef Keli Fayard of Vanille Pâtisserie; Chef Peter Rios of Alliance Bakery; Chef Sandy Folsom of Wilton Enterprises; Chef Barbara Evans of Wedding Cake Connection; Sally Scheib of Esperanza Community Services; and Nelly Carreño of Telemundo.

While the judges examined each contestant's cake creation which consisted of three-tiered dummy cakes decorated by rolled fondant and gumpaste decorations, all of the guests observed Chef Laura Ragano of The French Pastry School demonstrate floral gumpaste decorations. Chef Laura was assisted by Wayne Johnson, host of "Wayne's Weekend" on NBC Chicago News Today. Chef Laura has been featured twice as a guest on Wayne's weekly segment.

The judges awarded three winners in both the culinary school and high school divisions. The culinary winners included Evangelina Bertand (1st Place), Leila Manoochehri (2nd Place), and Sarah Dunworth (3rd Place). The winners of the high school division were Semaj Thomas (1st Place), Nina Salem (2nd Place), and Graciela Martinez (3rd Place).

"This competition was a successful event on many levels: It provided a challenge and creative outlet for students in both the culinary and high school levels, while benefiting the members of Esperanza," said Franco Pacini, Director of Pastry Chicago and Board Member of Esperanza Community Services. "It's a wonderful thing to bring several sectors of the educational community together and to contribute to a worthy cause."

Blend the following Ingredients:

1¼ oz of Simple Syrup

1 Strawberry for Garnish

Pour into wine glass and rim with pink sugar (dip glass rim in grenadine and then rim granulated sugar). Place a strawberry on the rim of the glass and serve.

3 oz Pina Colada Mix
1 Wedge of Pineapple (no skin) or1 oz of Pineapple Juice

In a frozen Hurricane glass, pour a dash of blended ingredients into the bottom of the glass and then add an ounce of X-Rated Fusion.
Pour more of the blended cocktail to halfway up the glass and add: 1oz X Rated Fusion.
Top off the glass with the rest of the blended cocktail.
The effect should be a swirl of pink throughout the glass.

Tully Julep

As anticipation mounts for the 2009 Kentucky Derby, horseracing fans around the world convene for southern food, lively conversation, and, of course, whiskey and cocktails shared amongst friends.

Dark Beers: Not Just for the Dark Day

Brewers Association Releases Top 50 Breweries List

Brewers Association, which represents the majority of brewing companies in the U.S., announced the annual list of top 50 brewing companies. Released are lists for both Top 50 Craft Brewing Companies¹ of small and independent craft brewers (see Craft Brewing Statistics) plus a Top 50 Overall Brewing Companies list. Rankings are based on sales volume in 2008.

"In 2007, 35 of the top 50 brewing companies were small and independent craft brewers. In 2008 there were 37," states Paul Gatza, Director of the Brewers Association. "Craft brewers continue to have success and generate excitement behind the flavorful beer movement, but not without recent challenges including price increases for raw materials and supplies, as well as access to market issues."

Changes from last year's list include breweries moving up or down in the rankings based on volume sales. There was one new entrant into the Top 50 Craft list, The Saint Louis Brewery, and two craft brewers have claimed spots in the Top 50 Overall list—Big Sky Brewing Co. and Mac & Jack's Brewery. Consolidation of MillerCoors, last year's number 2 and 3 brewers, opened up a slot, and the merger of Widmer Brothers and Redhook into the company now named Craft Brewers Alliance, Inc. opened up another slot filled by emerging small and independent craft brewers.

A more extensive analysis of statistics on the craft beer segment in 2008 will be released April 22 during the Craft Brewers Conference in Boston, Massachusetts. The Association's full 2008 industry analysis, which shows regional trends and sales by individual breweries, will publish in the May/June issue of The New Brewer on May 19.

STRAWBERRY AVOCADO SALSA
Yields 3 ½ cups

1 8-ounce can pineapple chunks or tidbits
1 small avocado, pitted and diced
1 1-pound package Driscoll’s Strawberries, ¾” cubed
½ to1 whole jalapeno pepper, seeded and minced
1 tablespoon balsamic vinegar
½ teaspoon onion salt

Drain and reserve 2 tablespoons pineapple juice*.

In glass or pottery bowl, combine pineapple, reserved juice, avocado, strawberries, jalapenos, balsamic vinegar and onion salt.

Let stand 5 to 10 minutes for flavors to blend.

Serve with chips, or over grilled halibut or chicken breasts.

OR instead of pineapple, peel and chop 1 medium mango and add to remaining ingredients with 1/3 cup orange juice and 2 tablespoons lemon juice.


*For a simple marinade for chicken breasts combine remaining juice from pineapple, 2 tablespoons soy sauce, and ½ teaspoon sesame oil. Pour marinade over 2 large (or 4 small) halibut steaks/fillets or chicken breasts. Marinate 20-30 minutes; drain. Grill or bake until meat is done.

Tarts: Kid-Friendly Mother's Day Recipes

This Mother?s Day The Daphne Baking Company?s convenient sweet tart shells let even the smallest children create personalized homemade tarts for the special woman in their life ? no baking required! The gourmet, single-serving sweet butter shells can be filled with mom?s favorite ingredients like fruit and whipped cream, ice cream and chocolate. The Daphne Baking Company suggests the following ultra-simple tart fillings, adult supervision is recommended for children under 8.

For the Fruit Loving Mom
One box of The Daphne Baking Company Sweet Tart Shells
1 ? cup of strawberries, sliced
2 teaspoons granulated sugar
2 cups heavy cream, chilled
1 tablespoon confectioners? sugar
? teaspoon vanilla extract
Remove shells from package and thaw for 20 minutes.
Combine 1 cup sliced strawberries and granulated sugar, let sit 10 minutes
Mash strawberries lighting with the back of a fork, set aside.
Using an electric mixer, whip cream and confectioners? sugar on medium-low speed until frothy, about 30 seconds.
Increase speed to medium-high and beat until soft peaks form.
Add vanilla extract and continue to beat until stiff but still creamy.
Lightly fold whipped cream into the mashed strawberries.
Spoon strawberry whipped cream into tart shells.
Garnish with remaining sliced strawberries and serve immediately.
Serves 4

For the Chocolate Loving Mom
One package of The Daphne Baking Company Sweet Tart Shells
12 oz. semi-sweet chocolate, chopped
1 cup heavy cream
2 tablespoons unsalted butter
1 tablespoon Framboise Liqueur, optional
20 whole raspberries
Fresh whipped cream, optional

Remove shells from the package and thaw for 20 minutes.
Place the chopped chocolate in a medium sized stainless steel bowl, set aside.
Heat the cream and butter in a medium sized saucepan over medium heat, bring just to a boil.
Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes.
Add the liqueur, if desired.
Stir with a whisk until smooth and cool to room temperature.
Divide chocolate mixture into the tart shells and let stand for 15 minutes, chocolate will firm as it cools.
Garnish with whole raspberries and fresh whipped cream, if desired.

For the Ice Cream Loving Mom

Avocado Vichyssoise

Avocados are actually a semitropical fruit native to Mexico and Central America. Now grown in California for export, the Hass variety accounts for up to 85% of the more than 80 varieties known. Rich in dietary fiber, vitamins K, A, B6, C and folate, avocados also provide unsaturated fats containing oleic acid. It is the fats in avocados that lend their creamy texture to this soup and to other dishes such as
sauces and dips.

Serves 4

2 large ripe avocados
Juice of 1 lemon
4 cups (1 L) Mushroom Broth (see below)
Vegetable stock or water
1 potato, peeled and cut into 1⁄2-inch (1 cm) cubes
Sea salt and freshly ground pepper
1⁄4 teaspoon (1 mL) hot pepper flakes
1⁄2 cup (125 mL) rice milk or soy milk
4 tablespoons (60 mL) chopped fresh chives or Basil Pesto, optional

Peel, pit and slice avocados in half and place in a bowl with lemon juice.

In a saucepan, bring broth to a gentle boil over high heat. Add avocados with lemon juice and potato. Season to taste with salt, pepper and hot pepper flakes. Cover, reduce heat and simmer for 15 minutes or until potato is soft. Let cool.

In a blender, combine rice milk and avocado mixture and blend until smooth. Transfer to a bowl, cover and refrigerate for 1 hour or until well chilled. Ladle into soup bowls and garnish with chopped chives, if using.

Tip
Avocado Vichyssoise may be made up to 2 days in advance and stored tightly covered in the refrigerator.

Mushroom Broth

This broth is brown and rich, full of earthy mushroom essence.

Serves 4

8 ounces (250 g) shiitake mushrooms
1 leek, white and light green parts, sliced
1 cup (250 mL) chopped onion
1 clove garlic, finely chopped
2 tablespoons (25 mL) olive oil
3 cups (750 mL) vegetable stock or water, divided
1 teaspoon (15 mL) pure maple syrup
1 teaspoon (5 mL) salt

Trim and discard mushroom stems. Slice caps and set aside.

In a large saucepan over medium heat, combine leek, onion, garlic and oil. Cook, stirring frequently, for about 10 minutes or until very soft. Add mushrooms and 1⁄2 cup (125 mL) of the stock. Bring to a gentle boil. Cover, reduce heat and simmer for 15 minutes.

Add remaining 21⁄2 cups (625 mL) of the stock, maple syrup and salt. Bring to a boil. Cover, reduce heat and simmer for 45 minutes.

For a clear broth, strain through a sieve and discard vegetables. For a thicker soup, using a slotted spoon, lift out half the vegetables and transfer to a food processor or blender. Process for 30 seconds or until smooth. Pour into a bowl. Repeat with remaining vegetables. Keep remaining broth liquids hot in the saucepan over low heat. Return purée to the saucepan and stir into the liquids.

Store stock in clean jars with lids in the refrigerator for up to 2 days or freeze in 2- or 4-cup (500 mL or 1 L) portions in freezer containers for up to 2 months.

Roasted Vegetable Salad

In summer the grill is easy and fast for grilling vegetables. Use an oiled basket or skewer the veggies whole to grill, then cut into serving-size bites. When combined with balsamic vinegar, the plums morph into a tart-sweet self-basting dressing.

Serves 4

• Preheat oven to 375°F (190°C)
• Rimmed baking sheet, lightly oiled

2 black plums, cut into eighths
1 red bell pepper, cut into eighths
1 carrot, cut in half lengthwise and then crosswise into eighths
1 onion, cut into eighths
2 cauliflower florets, thinly sliced
Sea salt and freshly ground pepper
4 tablespoons (60 mL) olive oil, divided
2 cups (500 mL) packed seasonal greens
2 tablespoons (25 mL) balsamic vinegar
1 can (14 to 19 oz/398 to 540 mL) chickpeas, drained and rinsed

On prepared baking sheet, combine plums, red pepper, carrot, onion and cauliflower. Season to taste with salt and pepper. Toss with 2 tablespoons (25 mL) of the oil and arrange in a single layer. Bake in preheated oven for 30 to 40 minutes or until tender when pierced with the tip of a knife.

In a salad bowl, toss greens with roasted vegetables and pan juices. Add remaining oil, vinegar and chickpeas. Taste and add more salt and pepper, if required.

Tip
You can use 2 cups (500 mL) cooked chickpeas, drained and rinsed, instead of canned.

Poached Peaches with Lavender Custard

People will wonder what the “spice�� is here as long as you don’t use too much lavender. The fragrant flowery taste complements the bland flavor of the custard.

Serves 4

4 peaches, halved
3⁄4 cup (175 mL) apple juice
1⁄2 cup (125 mL) white wine

Lavender Custard
1�2 cup (125 mL) soy milk or rice milk
1 piece (3 inches/7.5 cm) vanilla bean
1 piece (2 inches/5 cm) licorice root, optional
1 tablespoon (15 mL) dried lavender buds
12 ounces (375 g) silken tofu

In a saucepan, combine peach halves, apple juice and wine. Bring to a boil over medium heat. Reduce heat and simmer for 10 minutes or until the tip of a knife meets with some resistance when inserted. Remove from heat and let peaches stand in the poaching liquid until ready to serve or overnight.

Lavender Custard:
In a saucepan over medium-low heat, combine soy milk, vanilla bean, licorice, if using, and lavender. Cover, reduce heat and simmer until bubbles form around outside edge of pan. Let cool with cover on. Strain and discard vanilla, licorice and lavender. In a blender or food processor, process tofu until smooth. With the motor running, add cooled soy milk through opening in lid. Blend until smooth.

Using a slotted spoon, lift peaches into bowls and top with custard. Custard will keep tightly covered in the refrigerator for up to 2 days.

Tip
Use only organic lavender, which has not been chemically treated.
